Cowboy Caviar
Dressing:
1/3 cup EVOO
1/4 cup apple cider vinegar
1 T agave nectar or other natural sweetener
5 or 6 drops hot sauce
3 cloves garlic minced
up to 1/2 cup chopped cilantro
4 scallions chopped
salt and pepper to taste
Mix first 5 ingredients then add scallions and cilantro and mix
Rinse and drain and add to dressing
1 can shoepeg corn
1 can black-eyed peas
1 can black beans


Optional to add diced tomatoes, chopped red onion or chunked up avocado.  Add avocado right before serving to prevent discoloration.
Chill and serve with tortilla chips.  Great topper on a salad with guacamole!
