Pattypan, Zucchini and Summer Squash are all growing fast and furious.  The Pattypan variety shown here is another variety of summer squash.  Pattypan is a good source of magnesium, niacin, and vitamins A and C. One cup contains approximately 20 to 30 calories and no fat. Enjoy summer squash grilled, steamed, in a stir fry or cut up raw on a salad or in a wrap.  It adds great crunch and mild flavor.  
Summer Salad
1 cucumber peeled and chopped
1/2 pint grape tomatoes sliced in half
1 green zucchini chopped
1 yellow squash chopped
20 pea pods chopped (remove strings first)
1/2 red onion chopped
8 to 10 stalks asparagus (cut each one into 2 inch pieces, steam for one minute then place in ice cold water to stop the cooking process.  They will be a beautiful shade of green and will have a milder flavor and be a bit more tender)
Dressing:  Juice 2 or 3 lemons, 1/4 cup extra virgin olive oil, salt and pepper to taste, and pour over veggies.  Stir and let sit for 1/2 hour before serving.
